Quick answer
Store your 40 piece truffle gift box in a cool, dark place between 60-70°F (15-21°C) and consume within two weeks for peak flavor. Avoid refrigeration unless absolutely necessary.
Why temperature matters most
Chocolate truffles are sensitive to heat and humidity. Above 75°F, the cocoa butter can melt and cause bloom—a harmless but unappealing white film. Below 55°F, condensation can form when you bring them back to room temperature, ruining the texture. The sweet spot is a stable 60-70°F.
When refrigeration makes sense
If your home runs warm or you live in a humid climate, refrigeration can extend freshness. The trade-off is that cold truffles can absorb odors from other foods and develop condensation. To minimize risk, place the box inside an airtight container before refrigerating, and let it sit at room temperature for 20 minutes before opening.
Diagnose and fix storage issues
- Symptom: White or gray film on the surface of truffles.
- Likely cause: Temperature fluctuation or exposure to heat caused cocoa butter to rise to the surface (fat bloom).
- Corrective action: Move the box to a stable 60-70°F location away from sunlight, ovens, or radiators. The bloom is cosmetic and safe to eat, but flavor may be slightly muted. If bloom appears again after moving, the storage spot is still too warm. Choose a cooler area.
- Stop or choose another option: If truffles smell like other foods or have a sticky, wet surface, they have absorbed moisture or odors. Discard any with mold. For future gifts, consider ordering closer to the event so they spend less time in storage. For long-term storage beyond two weeks, freeze the sealed box in an airtight container, then thaw slowly in the fridge before opening.
